Coq au vin – French chicken stew
The rich aroma of red wine, juicy pieces of chicken, and aromatic spices take you to the heart of French culinary tradition. Coq au vin is not just a dish, but an experience that takes us on a journey through French gastronomy. Preparing this dish requires patience and attention, but it rewards us with a unique blend of traditional ingredients and spices.
Ingredients:
1 chicken, cut into pieces
1 onion, finely chopped
2 carrots, sliced into rounds
2 celery stalks, sliced into rounds
2 cloves of garlic, finely chopped
250g mushrooms, sliced
2 cups of red wine
2 cups of chicken broth
2 tablespoons of flour
2 tablespoons of butter
Salt and pepper
Fresh parsley leaves
In a large pot, heat the butter. Add the chopped onion, carrot, celery, and garlic and sauté for 5 to 10 minutes. Add the mushrooms and continue sautéing for about 10 minutes, then transfer everything to another container and add the chicken to the pot. Sauté it until golden brown on all sides, then return the vegetables and mushrooms, sprinkle with flour, and stir. Gradually add the red wine and chicken broth to the pot. Reduce the heat and simmer for about 2 hours, adding parsley leaves towards the end. Serve hot and enjoy the rich taste of traditional Coq au vin!
