Pasta with smoked trout
Weekend inspiration brings you a recipe for smoked trout and an unusual but great side dish – pasta.
For the fish:
- 4 smoked trout fillets
- 2 tablespoons of olive oil
- 1 lemon
- Spices – 1 teaspoon (oregano, basil, white pepper, salt, selenium, marjoram, garlic)
Sprinkle the fillets with lemon juice and spices, and leave for 15-20 minutes to season. Preheat the pan very well (but do not add any fat) and put the fish in it until it is browned and releases its own fat, and after a few minutes, turn it on the other side.
For the pasta:
- 400g of Rummo pasta
- 50g of butter
- 400g Dukat cooking cream
- 50g of Parmesan cheese
- 1 clove of garlic
- 1 pinch of nutmeg
- Salt
- freshly ground pepper
Put the pasta in a pot of hot, salted water. 2-3 minutes before it is ready, pour the cream into the heated pan, press the garlic, add the cubes of butter and wait for it to melt. When the butter is completely melted, stir in the Parmesan cheese. At the end, season the sauce with a little nutmeg.
Strain the cooked and drained pasta and add it to the pan with the sauce and leave for another minute to combine.
