Weekend Inspiration for Fish Tacos

Ingredients:

  • 500 g cod
  • tortillas
  • 2 cloves garlic
  • 1 lemon
  • 1 tablespoon sesame oil
  • 2 leeks
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 cup corn
  • salt and pepper

Combine the cod with finely chopped garlic and lemon zest, then set aside. Heat the sesame oil and sauté the sliced leeks and bell peppers for about 7 minutes, seasoning with salt. Cook the cod for 2 minutes, then add it to the vegetables, cover, and cook for 5 minutes. Drizzle with lemon juice and mix in the cooked corn. Add two tablespoons of the prepared mixture to warmed tortillas, roll them up, and enjoy with a glass of Sauvignon Blanc.
