Weekend Inspiration for Salmon Risotto

Ingredients:

  • 2 salmon fillets
  • 15 g Arborio rice
  • 4 tablespoons olive oil
  • 4 spring onions
  • 2 tablespoons parmesan cheese
  • 1 lemon
  • 50 ml almond milk
  • 4 cloves garlic
  • salt and pepper

 

Clean the salmon fillets, season with salt, and set aside. Cook the rice, then finely chop the spring onions and garlic. Squeeze the lemon juice and grate some lemon zest. Sauté the spring onions and garlic in olive oil, then add the lemon zest and salt. After 5 minutes, pour in the almond milk and stir. Add the grated parmesan, lemon juice, and pepper, and leave it on the heat for another 5 minutes. Pan-fry the salmon fillets in olive oil, drizzle with lemon juice, and season with pepper. Combine everything with the rice. Before serving, sprinkle with nuts and seeds of your choice and enjoy!
