Weekend Inspiration: Stuffed Squid with Parmesan

Ingredients:

 

squid

100 g grated Parmesan

50 g breadcrumbs

200 ml tomato sauce

50 ml white wine

capers

black olives

2 eggs

2 cloves of garlic

2 slices of bread

chopped parsley

olive oil

salt and pepper

 

Preparation:

 

Clean the squid. Chop the tentacles and wings, then sauté them in olive oil with chopped garlic, capers, and olives. After a few minutes, remove the from the heat and stir in the crumbled bread, breadcrumbs, parsley, Parmesan, eggs, salt, and pepper. Stuff the squid with the filling and close them with toothpicks. Lightly fry them with garlic, pour in the wine, and let the alcohol evaporate.

Pour over the tomato sauce, and season with salt, put it in the oven and bake for 20 minutes at 180°C.
