Cheesecake Crumble with Apples

Base:
210 g crushed biscuits
110 g melted butter
a handful of chopped walnuts
Cream:
500 g cream cheese
2 tablespoons sugar
1 tablespoon caramel
100 g melted white chocolate
1 teaspoon vanilla extract
300 ml whipping cream
Apple filling:
3 apples, diced
40 g butter
3 tablespoons brown sugar
cinnamon to taste
Crumble:
100 g flour
50 g butter
30 g sugar
a small handful of chopped walnuts
1 teaspoon cinnamon
Mix biscuits, butter and walnuts, press into a pan and chill in the fridge. Beat cream cheese, whipping cream, sugar, caramel, vanilla and white chocolate into a smooth cream, spread over the base and chill. In a pan, melt butter, add sugar, apples and cinnamon, sauté for 5 minutes and let cool. Pour over the cream. For the crumble, mix all ingredients, spread on baking paper and bake at 180°C for 15 minutes. Sprinkle the cooled crumble over the cake and drizzle with a bit of caramel. Chill for a few hours before serving.
