Weekend Inspiration: Green Pasta with Salmon

Ingredients:
150 g green pasta
100 g fresh salmon (cut into cubes)
1 cup fresh spinach (chopped)
1 zucchini (grated or sliced into strips)
1 tbsp olive oil
1 clove garlic
1 red onion (finely chopped)
juice of ½ lemon
salt, pepper, and oregano
2 tbsp fresh basil
Cook the pasta according to the instructions. In a pan, heat the olive oil, add garlic and red onion, and sauté briefly. Add the zucchini and cook for a few minutes, then add the salmon cubes and sauté for about 5 minutes. Add the spinach and cook for another minute. Stir in the cooked pasta, season with salt, pepper, oregano, and lemon juice. Finally, sprinkle with fresh basil and serve warm.
