Weekend inspiration for veal roast

Ingredients:

• a piece of 5 veal ribs

• 2 tbsp dried porcini mushrooms

• 1 tsp oregano

• 1 tbsp whole black peppercorns

• salt

Sauce:

• prepared horseradish

• greek yogurt

• garlic powder

• salt and pepper

Finely crush the dried porcini, salt, pepper, and oregano, then rub the mixture all over the meat. Let it rest at room temperature for one hour. Transfer the meat to a baking dish, cover with foil, and roast at 150°C for 3 hours. Towards the end, increase the oven temperature to 200°C, remove the foil, and roast for another 15 minutes to create a crisp crust. Remove from the oven and let the meat rest for one hour. Separate the meat from the bones, slice, and drizzle with the pan juices. For the sauce, mix Greek yogurt with horseradish, garlic powder, salt, and pepper.
