Weekend Inspiration: Salmon with Sweet Chili Sauce and Sesame

Ingredients:

400 g salmon fillet

2 cm fresh ginger

2 cloves of garlic

1 spring onion

1 tablespoon sweet chili sauce

1 tablespoon rice vinegar

30 g honey

45 ml soy sauce

1 tablespoon sesame oil

1 tablespoon sesame seeds

salt and pepper

Mix the grated ginger, crushed garlic, sweet chili sauce, rice vinegar, honey, soy sauce, and sesame oil until you get a smooth marinade. Cut the salmon fillet into four equal pieces, season them, then pour over the marinade, cover, and let marinate for at least 30 minutes. Preheat the oven to 200°C and bake for 20 minutes, brushing with the marinade every 5 minutes. Towards the end of baking, sprinkle the salmon with sesame seeds and let it bake a little longer. Serve with cooked rice and broccoli, topped with chopped spring onion.
