Weekend Inspiration for Cheese and Ground Beef Quesadillas

Ingredients:

450 g ground beef

6 large tortillas

200 g cheese (grated)

1 red onion

1 bell pepper

1½ teaspoons Mexican seasoning

1 tablespoon olive oil

2 tablespoons butter

salt and pepper

1 small can of corn

Preheat the oven to 100°C. In a pan, sauté the chopped onion and bell pepper until softened. Add the ground beef and cook, stirring constantly, until the meat is nicely browned. Season with Mexican seasoning, salt and pepper. Evenly sprinkle grated cheese over each tortilla, then place the meat mixture and corn on one half of the tortilla. Leave the tortillas open.

In a pan over medium heat, melt the butter and add one tortilla. Cook until the bottom turns golden, then fold it over so the meat side stays on the bottom. Cook briefly until the cheese melts. Transfer the finished tortilla to the oven to keep warm.
