Weekend Inspiration: Alipaša Steak

Ingredients:

1 veal schnitzel

2 tablespoons kajmak

a little finely chopped smoked meat

1 egg

1 tablespoon flour

1 tablespoon breadcrumbs

olive oil

salt and pepper

Tartar Sauce:

3 pickles

1 dl kajmak (or clotted cream)

1 tablespoon mayonnaise

1/2 tablespoon mustard

a few drops of lemon juice

salt

Pound the schnitzel with a meat mallet until it becomes as thin as possible, then season with salt and pepper. Spread one tablespoon of kajmak in the center and add the finely chopped smoked meat.

Carefully roll the schnitzel into a roulade, tucking the ends in so the kajmak doesn’t leak out. Secure it with toothpicks where needed.

Prepare three bowls: one with flour, one with beaten egg, and one with breadcrumbs. First coat the roulade in flour, then dip it into the egg, and finally roll it in breadcrumbs. Repeat the breading process once more for an extra crispy crust. Fry over medium heat until golden brown.

Toward the end, melt one tablespoon of kajmak and pour it over the finished steak. Serve with tartar sauce.
