Weekend inspiration: Strawberry and White Chocolate Cheesecake

Ingredients:
For the crust:
250 g biscuits
90 g butter
15 g sugar
For the filling:
800 g cream cheese
250 g sugar
4 eggs
2 tbsp vanilla extract
100 g sour cream
200 g strawberries
150 g white chocolate
Crush the biscuits and mix them with the softened butter and sugar until you get an even mixture. Press the mixture into the bottom of a cake tin and place it in the freezer for 10 minutes to set. Then bake the crust for 10 minutes at 180°C.
Beat the cream cheese and sugar, then add the eggs one at a time, mixing constantly. Stir in the vanilla extract and sour cream, then add the melted white chocolate. Fold in the strawberries with a spatula so they stay whole.
Reduce the oven temperature to 100°C, pour the filling over the crust, and bake for 3 hours. Once baked, leave the cheesecake to cool completely, then decorate with fresh strawberries before serving.
