Rice and octopus
We present you with a recipe for octopus with rice. Octopus is one of the healthiest ingredients you can find on the market, and many consider it a superfood.
Follow these steps for your perfect weekend lunch…
Ingredients:
1 kg of octopus
2 dl of red wine
1.5 dl of olive oil
1 onion
2 cloves of garlic
3 tomatoes
green bell pepper
salt, pepper, and chili as desired
450 g of Gallo rice
a little bit of water
Preparation:
Clean the octopus and cook it in red wine and water. Once it is cooked, take it out, let it cool, and then cut it into pieces. Save the liquid that was collected during cooking.
Heat the olive oil in a large pan over moderate heat. Add the onion and sauté it for about 2 minutes. Then add the garlic, tomato, and bell pepper. Season with salt, pepper, and add chili as desired. Stir and cook for another 2 minutes.
Pour in the liquid that was created from cooking the octopus, mix everything, and let it come to a boil. Now add the rice, reduce the heat to very low, and cover. After 15 minutes, stir the rice to prevent it from sticking to the bottom of the pan. After another 5 minutes, the rice should be cooked.
Add the pieces of octopus, mix everything, and serve hot.
