Weekend inspiration for salmon with spinach

Ingredients:
- 4 salmon fillet
- 200 g fresh spinach
- 200 ml cooking cream
- 50 g grated Parmesan
- 3 cloves of garlic
- 3 tablespoons olive oil
- 1 tablespoon grated nutmeg
- juice of ½ lemon
- fresh parsley, finely chopped
- salt and pepper
Season the salmon fillets and place them skin-side down in a pan with olive oil. Cook for 5 to 7 minutes on each side until the skin becomes crispy. To prepare the sauce, add 2 tablespoons of olive oil and finely chopped garlic to the pan, and sauté for about 1 minute. Add fresh spinach and sauté for 2-3 minutes, then pour the cooking cream, nutmeg, and lemon juice. Cook for 3-4 minutes, then stir in the grated Parmesan. Return the salmon to the pan and cook over medium heat for 2-3 minutes.
Garnish with fresh parsley before serving.
