Weekend Inspiration: Turkey and Veggie Tortillas

Ingredients:

  • 400 g turkey
  • 8 tortillas
  • 200 g grated cheese
  • 30 g cilantro
  • 2 tablespoons olive oil
  • 2 green peppers
  • 2 red onions
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 1 teaspoon hot chili powder
  • 1 clove garlic
  • salt and pepper

Preheat the oven to 180°C. Mix the turkey pieces with garlic, cumin, chili powder, paprika, one tablespoon of olive oil, and cilantro, then cook them in the olive oil. Slice the onion into rings and sauté in a heated pan with the remaining oil, then add the peppers and cook until the vegetables soften. Combine with the turkey, then fill the tortillas with the prepared filling and grated cheese. Roll the tortillas, wrap them in foil, and bake for 10 minutes in the oven.
