Weekend Inspiration for Souvlaki Chicken
Ingredients:
750 g chicken breasts
250 g feta cheese
2 red peppers
1 red onion
1/2 kg young potatoes
5 cloves of garlic
A pinch of salt, pepper, and ground paprika
1/2 cup sun-dried tomatoes in oil
1/3 cup olives
1 tablespoon chopped fresh oregano
1 tablespoon of smoked paprika
3 tablespoons roasted pine nuts (optional)
4 tablespoons extra virgin olive oil
1/2 tablespoon Greek yogurt
2 lemons
2 tablespoons balsamic vinegar
1 shallot, finely chopped
Preparation:
Preheat the oven to 220°C. Mix two tablespoons of olive oil, the chicken, lemon zest and juice, balsamic vinegar, oregano, paprika, shallot, two cloves of garlic, salt, pepper, and ground paprika, then let it sit for 15-20 minutes. In a baking dish, place the potatoes with two tablespoons of olive oil, season with salt and pepper, add lemon, and bake for 20 minutes. Remove the potatoes, add the chicken, peppers, and onion. Drizzle with olive oil and bake for another 20-25 minutes. While baking, mix the sun-dried tomatoes, olives, pine nuts, and feta. In a separate bowl, combine the yogurt, garlic clove, and salt. Serve the chicken with potatoes, peppers, and onion, top with the feta mix and yogurt, and garnish with fresh herbs. Enjoy!
