Weekend inspiration for Marinated Roast
Ingredients:
- 1,5 – 2 kg veal shoulder
- 100 ml oil
- 2 cloves of garlic
- 150 g dried apricots
- salt and pepper
- paprika powder
- turmeric
- rosemary
- thyme
Mix two tablespoons of salt with one teaspoon each of pepper, paprika powder, and turmeric. Combine the spices, then add 50 ml of oil and mix again. Make cuts in the meat, then season it with the prepared spice mixture, adding the remaining oil as needed. Rub the meat with garlic; optionally, place garlic cloves and rosemary sprigs into the cuts. Preheat the oven to 200°C and roast the meat for five minutes to create a crust. Afterward, add water to the roasting pan and cover it. Lower the temperature to 180°C and roast for 90 minutes. Then, uncover the pan and roast for an additional 45 minutes. Add halved dried apricots during the final roasting time. Slice the meat and arrange it on a platter, reheating the remaining juices and apricots to pour over each slice. Serve with a glass of red wine and enjoy!
