Weekend Inspiration for Cuban Chicken with Rice

Ingredients:

  • 4 chicken drumsticks with thighs
  • 3 tablespoons olive oil
  • 1 red onion
  • 1 red bell pepper
  • 180 g rice
  • 1 liter chicken stock
  • 1 tablespoon tomato paste
  • 1 ½ teaspoons turmeric
  • 2 bay leaves
  • 2 teaspoons oregano
  • 2 teaspoons ground cumin
  • ½ teaspoon salt
  • salt and pepper to taste
  • 70 g canned green peas

Make little cuts in the chicken and season it. Sear the chicken in heated olive oil for about 8 minutes, then remove it from the pan. Finely chop the onion and pepper, sauté for about 5 minutes, add the stock, rice, tomato paste, spices, and the previously seared chicken. Cover the pan and cook on low heat for 35 minutes without stirring. In the last 5 minutes of cooking, add the peas and gently stir.
