Ingredients:
- 550 g flour
- 300 ml water
- 20 g fresh yeast
- 1 teaspoon sugar
- 2 teaspoons salt
- 120 ml olive oil
- cherry tomatoes
- olives
- herbs
- coarse salt
Mix 100 ml of warm water with the sugar, yeast, and a spoonful of flour. Let the yeast activate. Add the remaining flour, water, salt, and 60 ml of olive oil, then knead the dough and let it rest for one hour. Knead the dough again and place it into a baking pan greased with olive oil. Cover with foil and let it rest for another 45 minutes. Dimple the dough with your fingers and fill the indentations with chopped cherry tomatoes, olives, and herbs. Drizzle with the remaining 60 ml of olive oil, sprinkle with coarse salt, and bake at 200°C for about 30 minutes.
