Weekend Inspiration for Spring Lasagna

Ingredients:

  • 250 g lasagna sheets
  • 300 g cherry tomatoes
  • 200 g zucchini
  • 200 g spinach
  • 1 red onion
  • 200 g spring onions
  • 300 g parmesan cheese
  • 3 tablespoons olive oil
  • fresh basil
  • ½ cup tomato sauce
  • salt and pepper

In preheated olive oil, sauté finely chopped onion, cherry tomatoes, zucchini, and spring onions. Once softened, add basil and tomato sauce. In a baking dish, layer the lasagna sheets, then the sautéed vegetables, followed by a layer of spinach. Repeat with more lasagna sheets, vegetables, spinach, and cheese. Place spinach, vegetables, and cheese on the top layer. Bake for about 40 minutes in a preheated oven at 250°C.
