Weekend Inspiration: Souvlaki with Tzatziki Sauce

Ingredients:

For the skewers:

500 g beef shoulder

8 wooden skewers

 

For the marinade:

40 ml olive oil

30 ml lemon juice

1 clove of garlic

1 tsp oregano

¼ tsp ground cumin

salt and pepper

 

Additional:

Tzatziki sauce

2 flatbreads, halved

 

Cut the meat into large cubes. Mix the olive oil and lemon juice, then add finely chopped garlic, oregano, salt, pepper, cumin, and a bit of ground chili. Stir well. Add the meat to the prepared marinade, mix by hand, cover with plastic wrap, and refrigerate for at least 12 hours. Soak the wooden skewers in water so they don’t burn, then thread the meat onto them to make the skewers.

Heat a grill pan, brush it lightly with olive oil, and grill the skewers for about 10–12 minutes, turning occasionally. Remove the skewers to a plate, then toast the halved flatbreads in the same pan.

Spread a few spoons of Tzatziki sauce onto the flatbread, place two skewers on top, and drizzle with a bit of olive oil.
