Weekend Inspiration: Orzo and Chicken Salad

Ingredients:

250 g orzo pasta

300 g chicken breast

1 large onion

1 large bell pepper

cherry tomatoes

200 g feta cheese

 

For the dressing:

5 tablespoons olive oil

1 teaspoon mustard

salt and pepper

1 clove garlic

juice of one lemon

1 tablespoon basil pesto

fresh basil

 

Preparation:

Cook the orzo in salted water for about 15 minutes. Season the chicken breasts with salt and pepper, then pan-fry them in olive oil. Slice the vegetables into strips, and halve the cherry tomatoes. Mix the dressing ingredients together, then add the orzo, vegetables, and chicken. Sprinkle with crumbled feta cheese, chill, and serve.
