Weekend inspiration: Greek-style chicken

Ingredients:
Chicken leg quarters
300 g orzo pasta
2 green zucchinis
2 yellow bell peppers
1 red onion
300 g cherry tomatoes
100 g olives
200 g feta cheese
2 garlic cloves
100 ml olive oil
1 lemon
1 tsp oregano
1 tsp basil
½ tsp rosemary
A handful of fresh parsley
Salt and pepper
Prepare the marinade by mixing olive oil, crushed garlic, and dried herbs. Arrange the zucchini, sliced into half-moons, red onion, and bell peppers in a baking dish. Place the chicken on top, drizzle with half of the marinade and bake at 220°C for 30 minutes. Add olives, crumbled feta, and cherry tomatoes, then return to the oven for another 10 minutes. Finish with the remaining marinade, a splash of lemon juice, and chopped parsley. Serve with cooked orzo and enjoy the Mediterranean flavors!
