Weekend inspiration: Shrimp & Avocado Tortillas

Ingredients:

24 shrimp

8 mini tortillas

2 avocados

2 mangoes

2 peppers

1 head of green lettuce

2 limes

1 red onion

2 cloves of garlic

2 tablespoons olive oil

10 g parsley

salt and pepper

Dice the avocado and mango, and slice the red onion into thin half-moons. Deseed the peppers and finely chop them, then combine everything with the parsley and lime juice. Briefly marinate the shrimp with olive oil, garlic, salt and pepper, then pan-fry them until pink and cooked through. Slice the lettuce into strips and warm up the tortillas, then fill them with shrimp and refreshing mix. Enjoy!
