Weekend inspiration: Turkey curry with almonds

Ingredients:
• 200 g basmati rice
• 600 g turkey breast fillet
• 300 g chopped tomatoes
• curry powder
• 150 ml vegetable stock
• 50 g almonds
• 50 ml sweet chili sauce
• 1 red onion
• 1 garlic clove
• 4 tbsp olive oil
• salt and pepper
Heat olive oil in a wok and briefly stir-fry the turkey cut into strips, then remove it from the pan. In the same wok, sauté the finely chopped red onion and garlic, add the chopped tomatoes and curry powder, then pour in the vegetable stock. Return the turkey to the wok, add the almonds, and cook for a few more minutes. Season with sweet chili sauce, salt, and pepper, and serve with cooked basmati rice.
