Ingredients:
400 g cauliflower
1 red onion
1 garlic clove
1 tablespoon olive oil
20 g butter
100 ml cooking cream
100 g parmesan cheese
salt and pepper
Sauté the finely chopped red onion and garlic in olive oil and butter until soft. Add the cauliflower, pour in 400 ml of water, and cook until tender. Blend into a smooth soup, then stir in the cream and grated Parmesan over low heat until melted. Season and serve with toasted bread.

Vegan Cauliflower Curry

Ingredients:
400 g cauliflower
1 butternut squash
250 g chickpeas
400 ml coconut milk
1 red onion
3 garlic cloves
1 teaspoon grated fresh ginger
2 tablespoons curry paste
1 teaspoon ground turmeric
2 tablespoons olive oil
salt and pepper
Sauté the chopped onion, garlic, and ginger in olive oil. Stir in the curry paste and turmeric, then add diced squash and cauliflower. Cook briefly, then add chickpeas, coconut milk, and 200 ml of water. Simmer gently for 25 minutes, until the vegetables are tender and the sauce thickens. Season, serve with rice, and enjoy!
Cauliflower Fritters

Ingredients:
400 g cauliflower
2 eggs
3 tablespoons of flour
50 g parmesan cheese
1 garlic clove
parsley
oil
salt and pepper
Cook the cauliflower in salted water until soft, then drain well and mash with a fork. Add eggs, flour, finely chopped garlic, grated Parmesan, and parsley. Season to taste. Spoon the mixture into hot oil and fry until golden on both sides. Serve with sour cream.
