Weekend Inspiration: Salmon with Vegetables and Hollandaise Sauce

Ingredients:

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 1 carrot
  • 1 celery stalk
  • 1 red bell pepper
  • 80 g green beans
  • 80 g corn
  • 150 g couscous
  • 200 ml Hollandaise sauce
  • salt and pepper

Brush the salmon with olive oil and season with salt and pepper, then cook over medium-high heat for about 4 minutes. Dice the carrot, celery, and bell pepper, and sauté in olive oil for about 7 minutes. Once the vegetables have softened, add the green beans and corn. Pour 150 ml of hot water over one cup of couscous, cover, and let it sit for 5 minutes to absorb the water. Then, add the couscous to the vegetables. Mix everything well. To serve, first plate the couscous and vegetable mixture, place the salmon on top, and drizzle with Hollandaise sauce.
