Weekend Inspiration: Chicken, Cheese & Spinach Frittata

Ingredients:

12 eggs

120 ml milk

240 g cooked, chopped chicken

700 g fresh spinach

½ red onion

240 g mozzarella cheese

120 g feta cheese

2 tbsp butter

fresh dill and basil

salt, pepper

green onions (optional)

Preheat the oven to 180°C. Whisk the eggs with milk, spices, herbs, and chopped chicken. In a pan, sauté red onion in butter, then add spinach and cook until softened. Pour in the egg mixture, sprinkle with feta and mozzarella, and cook on the stove for 5 minutes. Then transfer the pan to the oven and bake for another 20 minutes. Let cool for 10 minutes before serving.
