Weekend inspiration for oven-baked veal steaks
Ingredients:
5 veal ribs in one piece
2 tablespoons dried porcini mushrooms
2 tablespoons salt
1 tablespoon black peppercorns
1 teaspoon oregano
For the horseradish sauce:
Greek yogurt
jarred horseradish
garlic
pepper
salt

Crush the dried porcini mushrooms, salt, pepper and oregano in a mortar. Rub the veal well with the prepared spice mixture on all sides, then place it in a baking dish and let it rest at room temperature for one hour.
Cover the dish with aluminum foil and bake the meat at 150°C for 3 hours. Towards the end of baking, increase the temperature to 200°C, remove the foil and bake for another 15 minutes, until the meat develops a crispy crust.
Take the roasted meat out of the oven and let it rest for about one hour. Then separate the meat from the bones and cut it into pieces. Pour over the juices released during baking.
For the horseradish sauce, mix Greek yogurt, horseradish, finely chopped garlic, salt and pepper.
