Weekend inspiration: Beef with honey

Ingredients:
1 kg beef neck
500 ml beef stock
75 ml balsamic vinegar
30 ml honey
6 cloves garlic
1 red onion
1 tbsp mustard
1 tbsp Worcestershire sauce
2 bay leaves
2 sprigs rosemary
olive oil
salt and pepper
Season the beef neck on all sides and sear it in olive oil for 4 minutes on each side. Meanwhile, heat the stock, balsamic vinegar, honey, mustard, Worcestershire sauce and finely chopped garlic, then mix well. Arrange the red onion rings, bay leaves and rosemary sprigs on the bottom of an ovenproof dish, then place the meat on top and pour over the sauce. Cover with aluminum foil and bake at 160°C for 2 and a half hours. Slice the cooked beef into pieces and drizzle with the sauce from the baking dish.
