Weekend inspiration for juicy veal…
Oven-roasted veal is an ideal meat choice for any occasion.
For this dish, you’ll need the following:
- 1 kg of veal leg
- 1 large onion
- 1 large garlic bulb
- Vegeta seasoning
- Kotany peppercorns
- 2 dl of white wine
- Olive oil
- Rosemary
- Parsley
Season the veal leg with olive oil and 1 dl of wine. Add the onion and garlic. Leave it to marinate for at least three to four hours. It would be best if, time permitting, you did this the day before the preparation. If not, you’ll still have a delicious meal; don’t worry. You can do it before the actual roasting, but then rub it with rosemary and salt, which will help the aroma be absorbed into the meat faster.
Place the veal and peeled, salted potatoes in a baking dish, sprinkle with Vegeta seasoning, and cover with aluminum foil.
Bake in a preheated oven at 200°C for about 50 minutes, then remove the foil, pour white wine over it, and continue baking for another 20 to 30 minutes.
Roasted veal prepared this way will be tender and juicy on the inside and nice and crispy on the outside.
