Weekend inspiration for a healthy meal – Halloumi cheese with asparagus!
Halloumi is a grilled cheese that keeps its shape well. When grilled, it is served as a warm appetizer with vegetables, salads, and spreads such as hummus. Exposure to high temperatures gives it a brownish, crispy crust and a soft interior.
Ingredients needed:
- 250 g of green asparagus
- 2 zucchini
- 2 red peppers
- 200 g Halloumi cheese
- 3 tablespoons of olive oil
- Parsley
- 1 purple onion
- 1 tablespoon of wine vinegar
- Squeezed orange juice
- 1 tablespoon of grated orange peel
- 1 spoon of mustard
- Salt and pepper
Preparation:
Clean the vegetables and cut the asparagus. Cut the zucchini and pepper into pieces, and the Halloumi cheese into one-centimeter-thick slices. Boil the asparagus in salted water for about 7 minutes, then drain.
Coat the Halloumi cheese with a spoonful of oil and fry in a hot grill pan for about 3 minutes. Fry the slices of cheese on all sides until they get a nice brown crust. Be careful not to overcrowd the pan, as space is needed for turning. Add zucchini and pepper and fry for about 4 minutes.
Wash the parsley, dry it, tear and chop the leaves. Peel and finely chop the purple onion. Mix with parsley, vinegar, remaining olive oil, orange juice and zest, mustard, salt, and pepper.
Serve the vegetables with cheese and drizzle with the dressing.
