Weekend inspiration for veal shoulder

Veal shoulder is a perfect choice for a family lunch, and below we bring you a recipe for its simple preparation.

Ingredients:

  • 1.5 kg veal shoulder
  • Salt and pepper
  • Small onion head
  • 2 garlic cloves
  • Parsley and rosemary
  • 2 dl olive oil
  • 2 dl red wine
  • Vegetable stock
  • Cooking string

Preparation:

Dry the veal shoulder well and season with salt and pepper. Then make two cuts in the meat and insert two cloves of garlic. Sprinkle with parsley and rosemary. Roll up the meat and tie it with string. Briefly sear the rolled meat on a pan with a little olive oil. Move it to baking paper, add wine, vegetable stock, and onion. Cover the dish or wrap it with aluminum foil. Bake at 180 degrees for one hour.

After that, turn the meat and cover it again with aluminum foil. Continue baking at 200 degrees for another hour. Before removing the string, let the meat cool for at least 10 minutes.

The prepared veal shoulder is ready to serve with roasted potatoes and vegetables.
