Weekend Inspiration for Pancakes Romanof


For pancakes:

  • 200 g flour
  • 50 ml oil
  • 300 ml milk or water
  • 2 eggs
  • 1 teaspoon sugar
  • 1 teaspoon salt


For filling:

  • 500 g vanilla ice cream
  • 500 g fresh or frozen strawberries or raspberries
  • 150 g powdered sugar
  • 100 g heavy cream
  • 1 dl cherry liqueur
  • 1/2 liter milk
  • 3 egg yolks
  • 3 tablespoons sugar
  • 1 packet vanilla sugar

Prepare the pancakes by mixing all ingredients in a deep bowl until smooth. Cook them on a pan for a few minutes on each side.

For the warm topping, mash the strawberries, add powdered sugar and cherry liqueur, and cook until it boils. Remove from heat.

For the filling cream, whisk 3 egg yolks and 3 tablespoons sugar in chilled milk, then cook over steam for 15 minutes. Let it cool slightly, then add heavy cream and mix well.

To serve Romanof Pancakes fill each pancake with the cream filling, place two scoops of vanilla ice cream on top, and drizzle with the warm strawberry topping.
