Grilled Chicken with Pineapple


  • chicken breast fillet
  • pineapple compote
  • olive oil
  • 2 teaspoons of soy sauce
  • 2 cloves of garlic, finely chopped
  • 1 egg
  • teaspoon of ground ginger
  • cherry tomatoes
  • salt and pepper

Whisk together the egg, pineapple compote  juice, soy sauce, ginger, and garlic. Season the chicken breast fillet and put it in the prepared marinade for about 30 minutes. Fry in heated oil for 7 minutes on each side.

Add pineapple rings to the pan and sauté until they acquire a nice golden color.

Pour the marinade over the chicken and pineapple and let it simmer gently for another 3 minutes.

Serve with cherry tomatoes.
