Veal shoulder

Veal shoulder, with just a bit more effort, transforms into a dish that’s perfect for any occasion…

Ingredients:

  • 2.5 kg Veal
  • Desired spices
  • Oil
  • 100 gr Butter

Preparation:

Marinate the veal on both sides with oil, salt, pepper, and your choice of spices. Place it in the oven, cover it with pierced foil, and bake at 220°C for 45 minutes. Afterward, apply a small amount of butter to the meat, return it to the oven, and bake for an additional hour and a half. About 15 minutes before it’s done, you can add 100ml of water for a delicious juice.

For a perfect accompaniment to the veal, we present an arugula and Parmesan salad idea:

 

Ingredients:

  • 2 packages of arugula
  • Some fresh coriander
  • 1 teaspoon of freshly squeezed lemon juice
  • 1 teaspoon of olive oil
  • 1 teaspoon of balsamic vinegar
  • 1 teaspoon of dried red pepper flakes
  • A pinch of pepper
  • Half a cup of grated Parmesan cheese

Preparation:

In a large bowl, combine the arugula and coriander. Season with lemon juice, olive oil, and balsamic vinegar. Sprinkle with red pepper flakes, pepper, and Parmesan cheese.
